This is seriously THE BEST Vegan Toasted Sandwich. Sweet and smokey butternut squash, tangy hummus, creamy avocado and rocket make this sandwich so delicious you won’t even notice the lack of cheese.
It’s also incredibly quick to make and the whole thing comes together in less than 20 minutes.
Delicious enough to convert anyone to veganism
