Vegan Chickpea Mayonnaise Salad (GF)

This Vegan Chickpea Mayonnaise Salad is easy to make, light but satisfying, and beautifully colourful!

Vegan Chickpea Mayonnaise Salad (GF)

The star ingredient is a delicious chickpea paste, which I’ve previously used to make onigiri. It’s made of smashed chickpeas, tahini, mustard and apple cider vinegar. The slightly acidic taste and the interesting texture (creamy from the tahini, meaty from the chickpeas) is reminiscent of tuna mayonnaise, though actually tastes much nicer I think.

The rest of the salad is made up of lettuce leaves and chicory (though you can use any other salad leaves you like), a good pinch of fragrant dried herbs and a basic salad dressing. You can also add some sliced red onion for extra flavour and sprinkle over some sunflower seeds for a lovely nutty crunch. 

This salad would make an excellent side dish for things like Japanese Mushroom Pizza, Yellow Turmeric Rice, Pumpkin Chestnut Pasta, Roasted Red Pepper Sauce Gnocchi, Sundried Tomato Pesto Pasta, or Sweet Potato Hummus…the possibilities are endless!

Or it’s also delicious on its own for a light lunch – you can add some quinoa or a grain to bulk it out, or put between two slices of bread and call it a sandwich!

For the chickpea mayonnaise
  1. 200g chickpeas
  2. 1 tablespoon tahini
  3. 1/2 teaspoon (Dijon) mustard
  4. 2 tablespoons olive oil
  5. 1 tablespoon apple cider vinegar
  6. Salt + pepper, to taste
For the salad
  1. Few handfuls lettuce leaves
  2. 2 chicory heads, roughly chopped
  3. 2 tablespoons sunflower seeds
  4. Optional: sliced red onion
For the salad dressing
  1. Pinch of dried herbs (I used Herbes de Provence but you can use thyme, rosemary, sage, or a mixture of all three)
  2. 2 tablespoons olive oil
  3. 1 tablespoon apple cider vinegar (or white wine vinegar)
  4. Pinch of salt and pepper, to taste
Instructions
  1. Start by making the chickpea mayonnaise: use a fork to gently smash the chickpeas in a bowl, then add all other ingredients and mix well – season according to taste
  2. Mix together all the ingredients for the salad dressing in a separate bowl
  3. Place the ingredients for the salad in a bowl, top with the chickpea mayonnaise and drizzle over the dressing
  4. Serve up and enjoy immediately!
