These Dark Chocolate Amaretto Prunes were inspired by my Prune Dark Chocolate Pudding. They’re subtly boozy, salty-sweet and all kinds of sophisticated.
The melt-in-your-mouth softness of the prunes contrasts perfectly with the hard chocolate shell, whilst the cacao nibs add an extra crunchy texture. And the deeply fruity, sweet-tart flavour of the prunes pairs beautifully with the salted, rich dark chocolate and nutty, earthy cacao nibs.
But what I love most about these Dark Chocolate Amaretto Prunes is that they’re inadvertently vegan, and seriously quick and easy to make!
And if you’re wondering what’s Japanese cuisine-inspired about these, I actually got the idea to soak prunes in almond liqueur because in Japan there’s a drink called umeshu which is made by soaking unripe plums in alcohol and sugar.
These Dark Chocolate Amaretto Prunes are perfect to give as gifts, but are also delicious eaten for dessert with a scoop of (dairy-free) vanilla or chocolate ice cream.

These Dark Chocolate Amaretto Prunes are subtly boozy, salty-sweet and all kinds of sophisticated.
- 10 prunes
- Splash of Amaretto (almond liqueur) (or sub any other liqueur of choice - ensure vegan/gluten-free if necessary)
- 40 g (1.5oz) dark chocolate (ensure dairy-free if necessary)
- Pinch of sea salt
- Cacao nibs, to decorate
Place prunes in bowl and add enough Amaretto to cover
Cover and leave in the fridge overnight or ideally for a few days until prunes absorb the liquid and become plump
Add a pinch of salt to the chocolate and melt it using a bain-marie or the microwave
Using a fork or chopsticks, coat the prunes in dark chocolate and place on greaseproof paper (this will make them easier to take off when the chocolate hardens)
Repeat for all the prunes
Sprinkle over cacao nibs to decorate before the chocolate hardens
Leave in fridge for a few hours until the chocolate hardens
Keeps covered in the fridge for up to a week
If you don't want to use alcohol, these prunes would be equally delicious soaked in water in place of the Amaretto
