These oven-baked Celeriac Fries are a great healthy alternative to potato fries!

Ingredients

  • 1 celeriac
  • 2 tablespoons olive oil (or sub coconut or rapeseed oil)
  • Salt + pepper, to taste
  • Optional: Few sprigs rosemary

Instructions

  • Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit)
  • Peel the celeriac (slice off the top and bottom and trim off the sides to remove the skin)
  • Cut into thick chips (I used a crinkle-cut knife but any knife will do!)
  • Add to a saucepan with enough water to cover and a pinch of salt, and boil for 10-15 minutes, to soften slightly 
  • Once the celeriac is done, drain away the water and add oil, salt + pepper and rosemary to the saucepan and mix well
  • Spread out over a large baking tray lined with baking paper and bake in oven for 35-45 minutes, until soft, golden brown and shrunken by half
