Celeriac Fries
These oven-baked Celeriac Fries are a great healthy alternative to potato fries!

Ingredients

celeriac
2
tablespoons
olive oil
(or sub coconut or rapeseed oil)
Salt + pepper, to taste
Optional: Few sprigs rosemary
Instructions
Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit)
Peel the celeriac (slice off the top and bottom and trim off the sides to remove the skin)
Cut into thick chips (I used a crinkle-cut knife but any knife will do!)
Add to a saucepan with enough water to cover and a pinch of salt, and boil for 10-15 minutes, to soften slightly
Once the celeriac is done, drain away the water and add oil, salt + pepper and rosemary to the saucepan and mix well
Spread out over a large baking tray lined with baking paper and bake in oven for 35-45 minutes, until soft, golden brown and shrunken by half
