Ingredients

For the dressing:

  • Juice of 1/2 lime
  • Pinch of cayenne chilli pepper, to taste
  • 1 tablespoon agave syrup (or sub any other sweetener)
  • 2 tablespoons olive oil
  • Pinch of salt

For the salsa:

  • 1 mango, peeled and cubed
  • 1/2 cucumber, diced
  • 3 tomatoes, diced
  • 1 small red onion, very finely diced
  • Bunch of fresh coriander (cilantro), roughly chopped

Instructions

For the dressing:

  • Mix together all the ingredients for the dressing in a small bowl

For the salad:

  • Add all chopped fruit, veg and herbs to a large bowl
  • Pour over dressing and mix well
  • Best enjoyed fresh but keeps in the fridge for up to a couple of days
