Splash of Amaretto (almond liqueur)(or sub any other liqueur of choice - ensure vegan/gluten-free if necessary)
40g(1.5oz) dark chocolate (ensure dairy-free if necessary)
Pinchof sea salt
Cacao nibs, to decorate
Instructions
Place prunes in bowl and add enough Amaretto to cover
Cover and leave in the fridge overnight or ideally for a few days until prunes absorb the liquid and become plump
Add a pinch of salt to the chocolate and melt it using a bain-marie or the microwave
Using a fork or chopsticks, coat the prunes in dark chocolate and place on baking paper (this will make them easier to take off when the chocolate hardens)
Repeat for all the prunes
Sprinkle over cacao nibs to decorate before the chocolate hardens
Leave in fridge for a few hours until the chocolate hardens
Keeps covered in the fridge for up to a week
Notes
If you don't want to use alcohol, these prunes would be equally delicious soaked in water in place of the Amaretto
