I mentioned the other day that I’d served this peanut curry with a delicious papaya salad, and so here’s the recipe as promised! 

Fruity salads are just the best – I love having little bursts of candy-like sweetness to offset the heat of a curry or richness of a creamy pasta sauce. After having created far too many mango-based salads, I thought it was time to branch out to other types of fruit. What I love about mango is its sweetness and tropical flavour, which makes it a great base for different spices and herbs. I wondered if papaya would work in a similar way – it’s also very sweet, tropical, and has a gorgeous colour too! 

So I decided to swap in papaya and was so happy I did! I’m not a massive fan of just eating papaya by itself, as I find it kind of lacks flavour and there are other fruits I much prefer. However, once you add a squeeze of zingy lime, a dash of piquant chilli and a few springs of refreshing mint, these work perfectly to bring out the heady natural sweetness of the papaya – such a kaleidoscopic array of flavours, and all of the ingredients quite conveniently happen to be really healthy too!

This papaya mint lime salad really is the perfect side dish: it’s easy to make, great prepared ahead, and works to bring out the flavours of a main without overshadowing it. This is truly a side salad that other side salads can only aspire to be.

I’d particularly recommend serving this alongside my Yellow Turmeric Rice, Chickpea Sweet Potato Peanut CurryTofu SatayChickpea Pumpkin Biryani or Peanut Tofu Stir Fry.

Ingredients
  1. 1 papaya, peeled and diced
  2. Handful of fresh mint, thinly sliced
For the dressing
  1. Juice of 1 lime
  2. 2 tablespoons olive oil
  3. Pinch of salt, to taste
  4. Optional: pinch of cayenne chilli pepper, to taste
Instructions
  1. Place papaya and mint in a bowl
  2. Mix together all ingredients for the dressing in a separate small bowl
  3. Pour dressing over the salad and mix well
  4. Best served fresh, but keeps in the fridge for up to a couple of days
