This 3-Ingredient Vegan Biscoff Mug Cake is moist, fluffy and perfectly rich. It's quick and easy to make and can be made in the microwave or the oven. Perfect for when you're craving something sweet but can't be bothered to make a whole dessert!
Biscoff spread is also known as Speculoos, cookie butter or cookie spread. It's made with blended up Lotus biscuits (also known as Speculoos biscuits). You can buy either smooth or crunchy Biscoff spread, and for this recipe I recommend the smooth one.
It's rich, has a sweet, caramel-like flavour and is warm and fragrant from the spices. Its flavour is very versatile and works well in a wide range of desserts.

No, unfortunately it's not gluten-free. This is because it's made with blended up Lotus biscuits, which contain gluten.
You can find Biscoff spread in the condiments section of most supermarkets, next to the jam and peanut butter etc.
Yes - if you don't have a mug, you can make it in a small bowl instead.
Yes - bake at 180 degrees Celsius (350 degrees Fahrenheit) for around 15 minutes, or until risen and an inserted skewer or fork comes out clean.
How to make this recipe
- Mix all ingredients together in a mug or small bowl.
- Microwave for 50 seconds, or until the cake has risen and cooked through – test with a skewer or fork and make sure it comes out clean.
Tip: If still not cooked, microwave again in 10-second bursts until an inserted skewer or fork comes out clean.
- Enjoy immediately!
Ingredients you can add to the batter
- Chocolate chips.
- Pieces of chopped apple or grated apple. Although bear in mind that you will have to adjust the cooking time accordingly. Just microwave the cake in extra 10-second bursts until the cake has risen and cooked through - test with a skewer or fork and make sure it comes out clean.
- Fresh or frozen raspberries.
- An extra teaspoon of Biscoff spread in the middle of the batter cake. This creates a lava cake effect as the Biscoff spread melts and gets super gooey in the microwave.
Can you make this gluten-free?
Unfortunately not, as Biscoff spread contains gluten! If you're looking for something gluten-free, I'd recommend my Vegan Peanut Butter Mug Cake, which is a very similar recipe. It's also refined sugar free!

Ingredients
- 4 tablespoons plain flour
- ¼ teaspoon baking powder
- 2 tablespoons Biscoff spread (cookie butter) (smooth)
- 4 tablespoons unsweetened almond milk (or sub any other kind of plant-based milk)
- ½ apple , peeled and diced (optional)*
Instructions
- Mix all ingredients together in a mug or small bowl until it has the consistency of cake batter - add a splash of milk if it's looking too dry.
- Microwave for 50 seconds, or until the cake has risen and cooked through - test with a skewer or fork and make sure it comes out clean.
- If still not cooked, microwave in 10-second bursts until an inserted skewer or fork comes out clean.
- Enjoy immediately!
