    No-Bake Energy Bites (Vegan + GF)

    These No-Bake Energy Bites are fudgy, chewy, perfectly sweet and super satisfying! They're easy to make, come together in one bowl, take only 15 minutes to make and require just 4 ingredients. They're vegan, gluten-free and refined sugar free too. Perfect for meal prep!

    How to make this recipe

    • Place all the ingredients in a glass mixing bowl.
    Oats, desiccated coconut, peanut butter and agave syrup in a bowl
    • Mix well.

    Tip: Place in the fridge for 20 minutes so that it firms up - this will make it much easier to roll into balls.

    • Use your hands to roll the mixture into little balls - you should be able to make 15.

    How long do these keep for?

    These keep in an airtight container in the fridge for a good few days.

    Can these be frozen?

    Yes, they keep in the freezer for up to one month - leave to thaw at room temperature for 30 minutes before eating.

    Substitutions you can make

    • The peanut butter can be replaced with almond butter, cashew butter, sunflower seed butter or tahini.
    • The agave syrup can be replaced with brown rice syrup or date syrup (I wouldn't recommend maple syrup as it's too liquidy).
    • You can add dried cranberries or chocolate chips.
    • You can add cocoa powder or matcha powder.

    Can you bake these?

    Yes! You can bake these in an oven preheated to 180 degrees Celsius (350 degrees Fahrenheit) for 12-15 minutes.

    Ingredients

    • 75 g (¾ cup) rolled oats (ensure gluten-free if necessary)
    • 4 tablespoons smooth peanut butter (or sub almond or cashew butter)
    • 4 tablespoons agave syrup (or sub brown rice syrup or date syrup) *
    • 3 tablespoons desiccated coconut

    Instructions

    • Mix together all the ingredients in a bowl.
    • Place in the fridge for 20 minutes so that it firms up - this will make it much easier to roll into balls.

      Question for Rhian: What are your thoughts about substituting almond better for peanut and honey for agave?
