This Vegan Rice Chocolate Mousse is indulgent, creamy and melt-in-your-mouth velvety! It's perfectly sweet, chocolatey, and light but rich. It's made with rice, and doesn't contain avocados, nuts, dates, coconut, tofu or aquafaba! It's refined sugar free, gluten-free, nut-free and soy-free. An easy make-ahead dessert for entertaining.

Using rice for a chocolate mousse may sound like a strange idea, but it has a creamy texture that's perfect for desserts - think Rice Pudding or Horchata. And the neutral flavour of the rice makes it a perfect base for chocolate mousse! I've also used it for making my Vegan Crème Caramel!
What type of rice should you use for Rice Chocolate Mousse?
- You can use either leftover cooked rice, or freshly cooked rice.
- You should use white rice, not brown rice or black rice etc.
- I used Japanese rice (also known as sushi rice), but you can use some other type of white rice if you can't get hold of it.
How to make this recipe

- Cook the rice according to instructions on the packet.
- Place the chocolate in a bowl.
- Melt the chocolate either over a bain-marie or in the microwave.
- Place all the ingredients in a food processor.
- Blend until smooth - you might need to mix it around a couple of times.
Tip: Taste and add more sweetener if necessary.
- Transfer the mixture into little glass pots or jars.
- Place in the fridge for a couple of hours to firm up before serving.
Substitutions you can make
- You can use any type of plant-based milk: rice milk, almond milk, cashew milk or oat milk. Coconut milk or soy milk also work, though they have a less neutral flavour.
- You can use any type of liquid sweetener: maple syrup, agave syrup, brown rice syrup etc.
- Use a refined sugar free chocolate, if necessary.
Ingredients you can add
You can easily customise the taste by adding ingredients such as:
- Chilli.
- Mint.
- Orange zest.
- Cinnamon.
- Liqueur of choice - rum or brandy etc.
- Vanilla.
- A pinch of sea salt.
How long does this keep for?
It keeps well in the fridge for up to a couple of days. It's a great make-ahead dessert for entertaining.

Ingredients
- 200 g (7 oz) uncooked white rice * (I used Japanese rice)
- 60 g (2 oz) dark chocolate ** (ensure vegan/refined sugar free if necessary)
- 140 ml (⅔ cup) unsweetened rice milk (or sub any other plant-based milk)
- 2 tablespoons maple syrup *** (or sub any other sweetener)
Instructions
- Cook the rice according to instructions on the packet.
- Melt the chocolate either over a bain-marie or in the microwave.
- Place all the ingredients in a food processor and blend until completely smooth - you might need to mix it around a couple of times.
- Taste and add more maple syrup if necessary.
- Transfer the mixture into little glass pots or jars.
- Leave in the fridge for a couple of hours to firm up before serving.
- Keeps well covered in the fridge for up to couple of days.
