These Sliced Baked Apples are soft and tender, fragrantly spiced and covered in a velvety caramel sauce that tastes like toffee or butterscotch! They're delicious hot or cold and are great for dessert, a snack or breakfast. They're super easy to make and are vegan, gluten-free, refined sugar free and oil-free too. An easy alternative to Apple Pie and perfect for entertaining!
Although whole baked apples are great, I also love Sliced Baked Apples because slicing them up allows for a more even distribution of flavour. Slicing them means they can be enjoyed for breakfast with granola and plant-based yogurt, oatmeal or with overnight oats and they also work as an excellent topping for pancakes, crepes or waffles!
How to make this recipe

- Mix together the coconut sugar, cinnamon, salt, vanilla, cold water and cornflour (cornstarch) in a baking dish (I used one measuring 26 cm (10 inch) by 18 cm (7 inch) and 7 cm (2 ½ inch) tall).
Tip: Make sure the cornflour (cornstarch) has dissolved completely and make sure you use cold not hot water otherwise the cornflour will clump up.
- Add the sliced apples and mix well.
- Seal the top completely with baking paper or tin foil and bake for 50 minutes, mixing halfway through.
- Remove the baking paper or tin foil and bake for a further 10 minutes, until apples are soft enough to gently pierce with a fork.
Serving suggestions
- You can enjoy these hot or cold.
- They are delicious for dessert with custard, ice cream or plant-based yogurt.
- But they can also be enjoyed for breakfast with granola and plant-based yogurt, oatmeal or with overnight oats.
- They also work as an excellent topping for pancakes, crepes or waffles!
How long do these keep for?
They keep covered in the fridge for a few days.
Substitutions you can make
- You can add dried fruits such as raisins, chopped dates or dried cranberries.
- You can add other spices such as nutmeg, ginger, cardamom or cloves.
- For a lower sugar version, you can use less coconut sugar or omit the coconut sugar and add chopped dates instead.
- You can replace the cornflour (cornstarch) with tapioca flour.

Sliced Baked Apples (Vegan + GF)
Ingredients
- 10 tablespoons coconut sugar
- 1 teaspoon ground cinnamon
- Pinch salt to taste
- 1 teaspoon vanilla extract
- 3 tablespoons cold water (make sure it's cold not hot water as otherwise the cornflour won't dissolve properly)
- 1 tablespoon cornflour (cornstarch) (or sub tapioca starch)
- 5 apples , cored, peeled finely sliced (1 kg or 35 oz in total)
Instructions
- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
- Mix together the coconut sugar, cinnamon, salt, vanilla, cold water and cornflour in a baking dish (I used one measuring 26 cm (10 inch) by 18 cm (7 inch) and 7 cm (2 ½ inch) tall) - make sure the cornflour has dissolved completly.
- Add the sliced apples and mix well.
- Seal the top completely with baking paper or tin foil and bake for 50 minutes, mixing halfway through.
- Remove the baking paper or tin foil and bake for a further 10 minutes, until apples are soft enough to gently pierce with a fork.
- Keeps covered in the fridge for up to a few days.
