Tips for packaging Christmas cookies for gifting
- Make sure the cookies have cooled completely before packing, otherwise they will release steam, which will make them soggy!
- Cookies without frosting are much easier to package for gifting - you can easily stack them on top of each other to wrap in baking paper or put in a tin or Tupperware.
- Cookies with frosting are slightly harder to package - they can't be stacked on top of each other so need to be laid completely flat along the bottom of a tin or Tupperware.

I want to make some as gifts for friends, and I'm wondering if it is possible to make the dough ahead of time and keep it in the fridge/freezer for a couple of days, and bake on the day I want to deliver the gifts?

Thank you! I would recommend freezing the dough over keeping it in the fridge as it can get quite dry in the fridge. But freezing the dough should work!

I cannot eat grains. Is there anything I can substitute for the brown rice flour in the recipes that call for it?

Are you ok with buckwheat flour? That should be ok as a substitute!
