What type of pumpkin is best to use for cooking?
There are lots of different types of pumpkin available so it can be overwhelming knowing which one to buy! My top tip for cooking with pumpkins is to steer clear of the ones sold for pumpkin carving or Halloween as those definitely don't taste good!!
My favourite type of pumpkin for cooking is Japanese kabocha pumpkin - it has a dark green skin and bright orange inside. It's much softer and silkier than other varieties and it's much sweeter too. The skin of this pumpkin is also edible and tastes good!
Where can you buy pumpkin purée?
Some of these recipes use pumpkin purée, which can be a challenge to find if you don't live in the US. In the UK you can usually find it in larger supermarkets, usually either the tinned fruit section or the "world foods" section. You can also find it online.
Can you make pumpkin purée at home?
Yes - you can absolutely make it yourself! The best way to do this is:
- Halve the pumpkin.
- Scoop out the seeds.
- Bake in an oven at 180 degrees Celsius (350 degrees Fahrenheit) for around 45 minutes - it will depend on the type and size of the pumpkin, but it needs to be baked until the pumpkin is soft enough to gently pierce with a fork and it's coming away from the skin slightly.
- Scoop the flesh out of the pumpkin into a food processor, discarding the skins.
- Whizz until completely smooth.
How long does homemade pumpkin purée keep for?
It keeps covered in the fridge for up to a few days and in the freezer for a month.
Can pumpkin be substituted for anything else?
Yes! If you can't get hold of pumpkin, it can generally be replaced with butternut squash or sweet potato.
